Want glowing skin, strong bones, and a sharp memory? Reach for some berries! They’re rich in immune-boosting, cancer-fighting antioxidants and a great source of vitamin A and vitamin C. According to research published in the Journal of Nutritional Biochemistry, the polyphenols found in blueberries can even help preserve bone density after menopause. Meanwhile strawberries, raspberries, and blackberries contain high concentrations of ellagic acid that aid in your skin’s ability to retain moisture and may help prevent the growth of cancer cells. Another study suggests that the flavonoids in blueberries and strawberries can slow down cognitive decline. And if you’re looking for a brighter smile, the salicylic acid found in strawberries works as a natural tooth whitener.

I generally pick up a carton or two of organic blueberries, blackberries, raspberries, or strawberries everytime I go to the farmers market or grocery store. I love to throw them in yogurt, smash them up and spread them like jam across buttered rice cakes, or just snack on them as-is. My favorite way to enjoy berries is in a salad, where they add brightness to the other savory flavors.

So ready to get strong, smart, and beautiful? Here’s a salad to get you going. This one contains radishes, another powerful superfood that pampers your skin and boosts your immunity. For dressing, a simple avocado oil and balsamic vinaigrette will do. I use avocado oil because its light flavor allows the juiciness of the berries to shine through.

Ingredients

Leafy greens
Strawberries, sliced thinly
Blueberries
Cucumber, diced
Radishes, sliced thinly
Avocado, diced

For added crunch, toss in some seeds or nuts of your choice.

DRESSING
1/2 cup avocado oil
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 or 2 garlic cloves, crushed
Salt and pepper to taste

Combine all ingredients in a mason jar and mix vigorously. Unused portion keeps for one week in the fridge.

TIP:

If your berries are too tart or not as sweet as you like, roast them in the oven at 400 degrees for 10 to 20 minutes. Heat brings out their natural sweetness, but tastes more like pie filling than fresh fruit.
