Packed with all kinds of yummy goodness, the stars of this salad are watergress and citrus, making it an immune-building powerhouse bursting with vitamin C. In fact, a serving of watercress has more vitamin C than an orange. Studies also suggest that the high folic acid content and phytochemical chemicals in watercress can act as an antidepressant, prevent stroke and cognitive disorders, assist pregnancy, promote cellular protection and improve thyroid and cardiovascular health. Watercress is also calcium-rich, so it’s great for your bones too! Supporting actors in this salad include cilantro, for clearing out heavy metals from the body, and hemp seeds, which are high in gamma-linolenic acid (GLA) and known to help balance the bodies’ homones.

Ingredients

organic watercress
micro greens
shredded carrots
shredded cabbage
plum tomatoes
raw pecans
hemp seeds

Grapefruit Cilantro Basil Dressing

3/4 cup extra virgin olive oil
1/2 large grapefruit, juiced
1/2 lime, juiced
1 1/2 Tablespoons balsamic or white wine vinegar
1/2 shallot, minced
1/2 Tablespoon grapefruit zest
1/2 Tablespoon lime zest
1 Tablespoon fresh basil, chopped
1 Tablespoon fresh cilantro, chopped
Salt and pepper, to taste

Combine ingredients in a mason jar and shake to mix together. Refrigerate unused portion. Keeps for a week.
